Delicious, Healthy, Cheap, Easy to Make Meal Prep - Breakfast Style

I love cooking and eating breakfast. With a busy schedule I often times find it difficult to make breakfast, clean up, and eat it in a short span of time at 6am. So, I created this tasty, healthy, cheap, and easy to make breakfast meal prep for myself so that I can just pop it in the microwave when I wake up and have breakfast in 2 minutes. This breakfast sandwich was inspired by Starbucks bacon, egg, and Gouda Sandwich and I hope all of you find this recipe useful in your morning routine.

Ingredients: This will make enough for 5 meals.

  • 10 Eggs

  • 2.5 Cups of egg whites

  • 8 Slices of turkey breast deli meat

  • 5 English Muffins

  • 5 Slices of Gouda cheese

  • Splash of milk (to help make eggs fluffy)

  • Salt & Pepper (for seasoning eggs)

  • Hot sauce (optional, I like to use Sriracha or Chipotle Tabasco personally)

Instructions: Total Time to Cook - 35 minutes

  1. Pre-heat your oven to 350 degrees Fahrenheit. While the oven is heating up, complete the remaining steps.

  2. You’ll want to beat all of the eggs, egg whites, and a splash of milk in a large mixing bowl until they are completely blended together.

  3. Grease a large glass pan with cooking spray or oil and place egg mix inside. Once the oven reaches 350 degrees place eggs inside and set a timer for 30 minutes. Know that the goal here is to have the eggs no longer be liquid, so if you’re unsure poke the center of the mixture with a knife and ensure it comes out clean. If needed bake for an additional 5 minutes until the desired consistency is reached.

  4. While the eggs are cooking, set a large pan on medium-high heat and coat with cooking spray. Cook the turkey slices for 2 minutes on each side or until a golden brown crust forms.

  5. While the turkey cooks, cut the English muffins in half and toast them to your desired texture.

  6. Once the eggs are done, pull them out of the oven and let them sit for 5 minutes. Season with salt and pepper and slice into squares. In my example I sliced into 15 squares so I could have 3 slices per sandwich.

  7. Now you can build your sandwich! Take 5 sheets of aluminum foil and have your cooked ingredients near by. Start with the bottom slice of your English muffin, add your first square of egg, next place 1 -2 slices of turkey, add your second slice of egg, and finish with a slice of Gouda cheese.

  8. Lastly, wrap your sandwich tightly and completely in the foil and store in your refrigerator!

As mentioned, not only is this recipe easy to make but it’s extremely nutritious! It’s packed with protein, carbohydrates, healthy sources of fat, is calorie friendly, and filling.
